Ingredients
- Potato- 2 medium sized
- Onion- 1 medium sized
- Garlic- 2 cloves
- Black pepper- a pinch
- Salt- As per taste
- Water- 2 cups
- Oil- 2 tablespoon
- Garlic and thyme hemptyful dip- 2 tablespoon
Instructions:
- Heat oil in a pan.
- Add chopped garlic and onion and cook on a slow flame till both vegetables turn translucent.
- Peel potatoes and cut into cubes.
- Add the potato cubes to the pan and cook for a couple of minutes.
- Season with salt and pepper.
- Add the water and allow to cook till potatoes are soft and mushy.
- Allow the mixture to cool.
- Put the mix in a blender and blend to form a smooth paste.
- Add garlic and thyme hemptyful dip to the blender.
- Adjust the consistency of the soup as per your preference.
- Add the puree back to the pan and bring it to a boil.
- Adjust the seasoning.
- Finish the soup with a couple of drops of truffle oil or Extra Virgin olive oil.
- Serve warm.
