Potato soup with Garlic and thyme


  1. Potato- 2 medium sized
  2. Onion- 1 medium sized
  3. Garlic- 2 cloves
  4. Black pepper- a pinch
  5. Salt- As per taste
  6. Water- 2 cups
  7. Oil- 2 tablespoon
  8. Garlic and thyme hemptyful dip- 2 tablespoon



  1. Heat oil in a pan.
  2. Add chopped garlic and onion and cook on a slow flame till both vegetables turn translucent.
  3. Peel potatoes and cut into cubes.
  4. Add the potato cubes to the pan and cook for a couple of minutes.
  5. Season with salt and pepper.
  6. Add the water and allow to cook till potatoes are soft and mushy.
  7. Allow the mixture to cool.
  8. Put the mix in a blender and blend to form a smooth paste.
  9. Add garlic and thyme hemptyful dip to the blender.
  10. Adjust the consistency of the soup as per your preference. 
  11.  Add the puree back to the pan and bring it to a boil. 
  12. Adjust the seasoning.
  13. Finish the soup with a couple of drops of truffle oil or Extra Virgin olive oil.
  14. Serve warm.
